Open the September/ October issue of Taste of home’s Quick Cooking and You’ll find a recipe on page 46 that was sent to the magazine by a Greensburg’s Helen Phillips. Helen’s picture is included with the recipe, which is in the Easy Meal Solutions section, titled Lively Leftovers. The casserole is called ‘Broccoli Ham Bake’ and a picture of the dish makes it look like a winner for busy families.
Helen, an experienced and enthusiastic cook, shouldn’t have been surprised when the magazine chose her recipe. She was though. “I entered several,” she said, “but when they called me and told me the casserole was scheduled to be in this issue and said they needed a photograph I was surprised - and pleased too.”
Helen got the recipe from Janet Hopper, wife of Mike Hopper, a former pastor of the Free Methodist Church. “That was in about 1988,” said Helen. “Mike and Janet invited us to their home and she served the casserole. It was really good so I asked her if I could have the recipe.”
Helen said the Hoppers now live in Minnesota but they still keep in touch.
This isn’t the first time Helen has been recognized for her recipes. Although she didn’t win any money for the one in Quick Cooking this month, she once won $250 for a brownie recipe that was in an issue of Home Cooking. “My water bill was extra high one month. I sent the brownie recipe to Home Cooking and it won. The magazine paid me $250 for it and it came in time to help pay the water bill.”
Helen has been cooking since she married in 1951. “I had five children so I’ve done quite a bit of cooking,” she said. “I always liked trying something different,” she said. “My family never knew what I was going to put before them. Sometimes they might be a bit hesitant to try a new dish, but they would and usually found they liked it.”
Every issue of the Quick Cooking magazine carries more than 100 convenient recipes for busy cooks. It has 1.5 million subscribers since it was first published in 1998. Some features in each issue are “10 Minutes to the Table,” “30 Minutes to Mealtime,” and “Great Grilling Recipes.”
Ann Kaiser of Reiman Publications said the recipes are selected with time in mind but never at the expense of taste. The Reiman Publication company also published Country, Taste of Home, Birds & Blooms, Reminise, Country Woman, Farm & Ranch Living, Country Discoveries, Crafting Traditions and Light & Tasty.

•Broccoli Ham Bake
1 package (10 ounces) frozen chopped broccoli
1/4 cup chopped onion
4 tablespoons butter, divided
2 tablespoons all-purpose flour
2 1/4 cups milk
1/2 cup shredded cheddar cheese
2 cups cubed fully cooked ham
1 1/2 cups seasoned stuffing croutons, divided
Cook broccoli according to package directions. Meanwhile, in a large saucepan, sauté onion in 3 tablespoons butter until tender. Stir in flour until blended, gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted.
Drain broccoli. Add the broccoli, ham and 1-cup stuffing croutons to cheese sauce. Transfer to a greased 2-qt. Baking dish. Melt remaining butter, toss with remaining croutons. Sprinkle around edge of casserole. Bake, uncovered, at 350 degrees for 25-30 minutes or until golden brown. Yields 4 servings.
